私は夫と出会ってからますます日本人らしくなった気がします。

夫は好奇心旺盛で聞いてみた事、やってみたい事はやらないと気がすまないタイプです。イギリスという国に住んでいても、もし鰹節に興味が湧いてしまったら鰹節のことを調べ、本物を削ってみたくなる。今回もやっと手に入れた鰹節と鰹節削り器。丁寧な手つきで鰹節を削ってくれます。スモーキーな香りのする鰹節を白いご飯にパラパラ、醤油をちょろりかけるだけで美味。

そして夫が「本格的にやろう!」と言って始めたお正月のお節料理も今年で5年目。今年も鰹節を削って出汁を取り、筑前煮とお雑煮を作ってくれました。エディンバラにはロンドンのような日系のスーパーはありませんが、アジアの食材を取り扱うアジアンスーパーで食材を調達できます。たくさん種類はありませんが、必要な食材はほぼ何でも手に入るありがたい存在です。2日間かけて準備したお節料理をコタツに入りながら食べる幸せ。今年も明るく楽しい一年になりますように。

I feel I have become more Japanese since I met my husband.

My husband is a curious person, he is always learning about new things. Once it gets him interested, he has to try and master it.

For example, if he gets interested in katsuobushi (dried bonito flakes), he wants to learn everything about it. I’m so grateful for his enthusiasm so I get to eat nice things.

It took him deep research to get himself some dried bonito and a bonito shaver. He shaves the dried bonito to make very thin fresh flakes. It has a beautiful smoky smell and is delicious just pour it over gohan (white rice) with a bit of soy sauce.

My husband wanted to try making Japanese New Year’s dishes called, Osechi ryōri. It combines a range of dishes with auspicious names representing wishes for future fortune. And some of them require cooking with good dashi (soup stock).

This year is the fifth year of making Osechi ryōri in the UK. He shaved dried bonito flakes to make dashi and made Chikuzen-ni (a classic one-pot stew with root vegetables) and O-zōni (a Japanese new year’s soup containing mochi rice cake). There are no Japanese supermarkets in Edinburgh like there are in London, but we can still find ingredients at Oriental supermarkets that sell Asian foods. We spent two days preparing the Osechi ryōri and were happy with the results. We had a lovely new year’s day (actually 3 days non-stopping) eating the dishes while sitting in the kotatsu.
